People like eating banana when it has yellow or brownish-yellow skin. Green bananas are difficult to digest because of too much of starch. If you are buying raw bananas (pre-ripened stage) which are green in color, you can ripen them at home – put them in paper bag (not a plastic bag) for couple of days. You can also put other already ripened fruits such as apples, kiwis, pears, tomatoes to help banana ripen faster. Don’t forget to check the bag once or twice a day ;). You can slow down the ripening process by keeping them in refrigerator (it turns black in refrigerator) The same thing goes for over ripened banana, which can be used in banana shakes after you keep them in freezer in peeled state.
